Today I am sharing one of my favorite kitchen hacks! In fact, I use the hack at least five days out of the week. Despite how much I try to improve my time management in the AM hours, the time I have left to prepare breakfast is always minimal. Frozen breakfast sandwiches that are ready in 60 seconds in the microwave are always an option (and I have certainly relied on these in past), but if possible I try to consume less processed whole foods.
My kitchen hack is to make a microwave egg omelet and place it between two slices of whole grain bread to create a sandwich. This delicious sandwich can be prepared in only a few minutes!
To make the omelet you simply spray the inside of a small bowl (I typically use a small salad bowl or glass bowl) with non-stick spray and quickly scramble up one egg. You can toss in veggies at this point. I usually just rip up some spinach and add to scrambled eggs. Throw in the microwave for 60 seconds and voila! While the egg is cooking you can put the toast into the toaster.
To maintain a nice moisture within the sandwich I suggest spreading a small amount of light buttery spread on at least one slice of the bread (both are optional). On some days I also add a slice of cheese or a few slices of avocado.
I have experimented with several different whole grain and sprouted grain breads for this sandwich, and my favorite option by far is Dave’s Killer Bread Thin-Sliced Powerseed bread. The Dave’s Killer Bread is nutrition packed with 3 g of protein, 4 g of protein and 280 mg of Omega-3’s (and only 60 calories per slice). This option also comes in a regular sliced option, but to keep calories in check I prefer the thinly-sliced version. Most importantly the bread tastes amazing and is the closest bread option to homemade bread in a package that I have ever found.
One of the best things to show up on my doorstep in a while was a sample box of Dave’s Killer Bread! I enjoyed several different varieties as toast (loved adding avocado to the toast) and as sandwiches. All of the varieties were scrumptious!
