Happy Super Bowl Sunday! Who do you want to win the Super Bowl?! Broncos? Seahawks?
I have never been much of a professional football fan, but do follow college football very closely (Go Pokes!). In other words I don’t have a preference of who wins the Super Bowl tonight. The commercials and halftime show are the main reason I watch the Super Bowl each year (check out my previous post for a preview of a few commercials). I can’t wait to see Bruno Mars perform at this years halftime show.
One of my all time favorite halftime shows was the 2002 performance by U2. What an inspiration and tear jerker! But a close runner up with either be Michael Jackson’s performance in 1993 or last years performance with Beyonce.
This year my family and I are headed to our neighbors house for a little Super Bowl par-tay. If I were having a Super Bowl party myself I would certainly offer todays recipe for Cauliflower Pizza Bites. They originated from the Mini Cauliflower Crust Pizza recipe I posted a few weeks ago. These Cauliflower Pizza bites offer a delicious crust made from Cauliflower and pizza sauce and are filled with gooey cheese. Each bite will leaving you wanting more!
DISCLAIMER: This is one of the more difficult recipes we have posted on the blog. You must follow the directions very precisely and carefully. The cauliflower must be put into the food processor and transformed into rice shapes (I call the final product of this “Cauliflower Rice”). It is also crucial the cauliflower rice is put into a dish towel and ALL water is squeezed out. If you follow these steps you will be very happy with the outcome.

- 1 small to medium sized head of cauliflower (should yield 2 to 3 cups once processed), washed and chopped (remove stems)
- 1/4 teaspoon kosher salt
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/8 – 1/4 cup shredded parmesan cheese, shredded (I used closer to 1/8 cup)
- 1/8 – 1/4 cup low fat mozzarella cheese, shredded (I used closer to 1/8 cup)
- 1 egg, beaten
- 2 tablespoons pizza sauce
- 2 low fat string cheese sticks, cut into 6-8 smaller pieces each
