Sometimes you just need a simple recipe for one.
Although the focus of this blog is healthy eating among the entire family there will always be a day when you need a quick meal option for one. Why not choose the all American meal of macaroni and cheese for this meal?!
The standard macaroni and cheese recipes contain ample amounts of butter, cheese, and milk. The combination of these ingredients result in a high fat dish. The average amounts of fat in one serving (1 cup) of macaroni and cheese can range anywhere from 8 to 24 grams of fat per serving. In the blog post Low Fat Coffee Cake Muffin I mentioned a food can be labeled "low fat" when the amount of fat is less than or equal to 3 grams per serving. Although this recipe contains nearly 4 grams of fat, the amount of fat is significantly less than a standard macaroni and cheese recipe.
1/2 cup elbow pasta, uncooked
1 cup water
1-2 teaspoons light buttery spread (ie. Smart Balance light buttery spread)
1 Laughing Cow Light Creamy Swiss Wedge
1 tablespoon low fat milk
salt and pepper to taste
1. Microwave pasta with water in covered ceramic or glass bowl (or cook pasta on stove); drain water if there is any excess (I did not have any excess).
2. Add remaining ingredients and microwave for one minute, stir well and continue to heat until cheese is melted.
