As with a few more of the recipes this month as I was testing the recipe I realized pumpkin added a nice flavor. I will be honest, I was a huge skeptic of the whole mashed cauliflower recipe to replace mashed potoatoes. I do love my potatoes!! After I made this recipe once I was sold. The Greek yogurt added a nice creamy flavor resembling sour cream. Who knew veggies could taste so good?!
My mom always talked highly of her hand blender, but I never followed her advice to purchase one. After I finally did I was hooked!

Ingredients:
1. Bring
pot of about 6-8 cups of water to boil
2. Add
cauliflower and let simmer about 10-15 minutes (or until cauliflower extremely
soft); drain water
3. Add
remainder of ingredients; using a hand mixer or hand blender blend until a
puree texture
4. Add
chives or green onions if desired
