Cauliflower Pumpkin Mash



Looking for a healthier alternative to replace your standard mashed potato recipe on Thanksgiving?  Meet Cauliflower Pumpkin Mash!!  This low carbohydrate and low calorie recipe is a great option to serve your health conscious guests.

As with a few more of the recipes this month as I was testing the recipe I realized pumpkin added a nice flavor.  I will be honest, I was a huge skeptic of the whole mashed cauliflower recipe to replace mashed potoatoes.  I do love my potatoes!!  After I made this recipe once I was sold.  The Greek yogurt added a nice creamy flavor resembling sour cream. Who knew veggies could taste so good?!





My mom always talked highly of her hand blender, but I never followed her advice to purchase one.  After I finally did I was hooked!

Ingredients:
1 head cauliflower
1/3 cup pumpkin puree (can add more if like)
2 tablespoons low fat milk
2 tablespoons Smart Balance light
2 tablespoons fat-free plain greek yogurt
1 ½ teaspoon parsley
½ teaspoon pepper
1/2 teaspoon salt
2 teaspoons garlic powder
½ teaspoon thyme
optional: chives

Directions:
1.  Bring pot of about 6-8 cups of water to boil
2.  Add cauliflower and let simmer about 10-15 minutes (or until cauliflower extremely soft); drain water
3.  Add remainder of ingredients; using a hand mixer or hand blender blend until a puree texture
4.  Add chives or green onions if desired
