I love pizza!
Pizza is one of my favorite meals – earlier on in my life I was known for eating pizza incessantly. Although I do not deny myself pizza currently, I try to eat it less frequently. As a registered dietitian I recognize that pizza can be an unhealthy food if consumed in large portions and or as a regular meal. When pizza is consumed as part of a meal I try to choose healthier versions and include vegetables (either on the pizza or as a side). Time has helped me to realize the healthiest pizza usually comes from my own kitchen. Thus I try to create healthier pizza options.
Through one of my cooking discoveries I have come up with a tasty bianca “white” flatbread pizza. The idea for this “white pizza” recipe was inspired by one of my favorite pizza places in New York City. “White” pizzas contain ingredients that are only white – tomato sauce is not included in the recipe.
In effort to reduce the calories substantially I used a flatbread as the crust and low fat cheese. The flatbread was the key to lowering the calories as it provided only 100 calories – most other “crust” options provide 2 or 3 times the amount of calories.

Ingredients:
1 Flatbread piece
1/3 cup reduced fat mozzarella cheese (shredded)
1/4 cup ricotta cheese
Fresh basil (4-6 whole leaves)
Italian seasoning
Directions:
1. Pre-head oven to broil (low).
2. Lay flatbread on pizza pan/baking sheet, spoon out ricotta cheese on flatbread in small circles (about 8-10 circles)
3. Place basil on flatbread; sprinkle mozzarella cheese on pizza
4. Broil for approximately 5 minutes (watch carefully as it can burn easily).
